Turkish breakfast, or kahvalti (literally “before coffee”), is one of the most generous and sociable morning meals in the world. It is not a quick bite but a leisurely spread of small dishes designed to be shared, savoured, and lingered over. In Turkey, breakfast is an event.

The Kahvalti Spread

A traditional Turkish breakfast covers the entire table with small plates. A full breakfast spread includes ekmek (fresh wheat bread) with preserves, honey, butter, boiled eggs, black olives, cucumbers, tomatoes, and sheep’s milk cheese. To this foundation are added kaymak (clotted buffalo or cow’s cream), bal (thick honey), sucuk (spicy garlic sausage, often fried with eggs), pastirma (cured beef), and peynir (a variety of white and aged cheeses).

Menemen is a beloved Turkish breakfast dish of scrambled eggs cooked with tomatoes, green peppers, onions, and spices, often served right in the pan with fresh bread for dipping. Simit, a circular bread ring encrusted with sesame seeds, sold from street carts throughout Turkey, is the quintessential Turkish on-the-go breakfast.

Tea, Coffee, and Ayran

Turkish tea (cay) is the undisputed king of breakfast beverages. It is served in distinctive tulip-shaped glasses and brewed using a double-boiler system that keeps the tea hot without allowing it to boil, giving it a smooth, non-bitter flavour. Turkish coffee, prepared in a jezve pot and served in tiny cups with the grounds settled at the bottom, is also popular.

Ayran, a simple drink of yogurt whisked with water and a pinch of salt, is served alongside savoury breakfast dishes. In winter, Turks drink sahlep: hot, sweet milk flavoured with orchid root powder and cinnamon, considered a cold remedy as much as a beverage. This elaborate breakfast tradition stands apart from the simplicity of Toast and shares the abundant, shareable spirit of Israeli Breakfast, while setting the stage for the equally substantial UK Breakfast.
