The United Kingdom is famous around the world for its hearty cooked breakfasts. The Full English, the Irish fry, the Scottish breakfast, and the Welsh breakfast are variations on a theme: a plate piled high with meats, eggs, bread, and vegetables, designed to fuel a full morning’s work. But each nation within the UK adds its own distinctive touches.

The Full English Breakfast

The Full English breakfast, also known as a “fry-up,” is the most famous of the British morning meals. A wide array of meats is always in evidence: bacon, sausage, grilled kidneys, and mutton chops. There are also eggs in profusion, grilled tomato and mushrooms, baked beans, and either oatmeal or cold cereal. Baked goods include assorted buns, crumpets, and brown bread with butter, honey, jam, or marmalade. There is absolutely always toast.

The culinary influence of England’s centuries of rule in India is visible at breakfast too, where kedgeree (originally khichri, a dish of lentils, rice and spices to which the English added smoked haddock, eggs, and cream) and mango chutney both make an appearance.

Ireland, Scotland, and Wales

An Irish breakfast is known as a “fry” and often includes white and black puddings, sausages made from pork meat, fat, and oatmeal (white) or blood (black). Irish soda bread, a slightly sweet white-flour bread raised with baking soda rather than yeast and studded with raisins, also features.

Scotland’s contributions include oatcakes (also called bannocks), scones, and Arbroath smokies, small haddock that are salted and smoked over a peat fire, eaten with lemon and brown bread. The Scots are especially renowned for their oatmeal porridge, served with sugar, cream, or black treacle.

Wales offers the most unusual traditional breakfast items: laverbread, an edible seaweed gathered from the rocky southern coast, served in porridge or mixed with oatmeal and fried; and cockles, bivalves similar to clams, often served fried in the morning. This hearty, multi-course approach is the pinnacle of British breakfast tradition, and no other nation does it quite like the UK. It stands in contrast to the lighter Mediterranean Spanish Breakfast and sets the stage for the equally inventive US Breakfast, where doughnuts and bagels add American flair.
