The Japanese breakfast, called asa-gohan (literally “morning rice”), is one of the most balanced and nutritious morning meals in the world. A traditional Japanese breakfast is a miniature version of a full Japanese meal, built around rice, soup, protein, and pickles. It reflects the Japanese culinary philosophy of ichiju-sansaione soup, three sides — creating harmony through variety and balance.

The Traditional Japanese Breakfast

A classic Japanese breakfast consists of several small components served together. Steamed rice (gohan) is the foundation, accompanied by miso soup (miso shiru) made with dashi broth, miso paste, tofu, seaweed, and green onions. A protein source, typically grilled fish (yakizakana) such as salmon or mackerel, provides savoury depth. Small side dishes include tsukemono (pickled vegetables), nori (dried seaweed), and tamagoyaki (a rolled omelette seasoned with soy sauce and mirin).

Some traditional eaters season their rice with nori seaweed flakes or mix in a raw egg for added protein. Umeboshi, pickles made from unripe plums soaked in brine and packed with red shiso leaves, are a popular breakfast accompaniment, valued for their vivid colour, tart flavour, and digestive benefits.

Green Tea and the Morning Brew

Green tea (ocha) is the traditional breakfast beverage, served hot and without sugar. Matcha (powdered green tea) is less common at breakfast but appears in more formal settings. In recent decades, coffee has gained popularity, and many Japanese now drink both tea and coffee in the morning.

Modern Japanese Breakfast

In urban Japan, the traditional breakfast has increasingly given way to Western-style options. Most people in cities now eat quick Western-style breakfasts: eggs, toast, juice, and coffee. Convenience stores offer a vast array of breakfast items including onigiri (rice balls wrapped in nori), sandwiches, and yogurts. Yet even in modern homes, miso soup remains a beloved constant, often prepared in minutes from instant packs.
