Indian Breakfast

India’s breakfast traditions are as diverse as the subcontinent itself. With dozens of distinct regional cuisines shaped by climate, religion, and history, what Indians eat for breakfast varies enormously from state to state. There is no single Indian breakfast, but rather a dazzling array of morning meals spanning everything from light rice pancakes to hearty lentil porridges.
South India: Idli, Dosa, and Appam
In southern India, breakfast is built around rice and lentils. The most famous dishes are idli, small, steamed cakes made from a lightly fermented batter of rice and split peas, and dosa, thin, crepe-like rice pancakes that are often filled with spiced potatoes. Both are served with sambar (a lentil-based vegetable stew) and coconut chutney.
Appam (thin rice pancakes, sometimes filled with spiced meat or vegetables) and idi-appam (rice noodles eaten with sweet coconut milk or meat curry) are also popular in the south. Puttu, crushed rice and coconut pressed in alternating layers into a bamboo mold, steamed and served with bananas and milk, is a beloved breakfast in Kerala. Coffee dominates in the south, with many people buying beans raw and roasting them at home for the perfect cup of filter coffee.
North India: Paratha and Khichri
In northern India, breakfast often means paratha, whole-wheat flatbreads stuffed with spiced potatoes, paneer, or cauliflower, cooked on a griddle with ghee and served with yogurt, pickles, or chutney. Another classic is khichri, a comforting mixture of rice, lentils, and spices that the English adopted during their colonial occupation, adding smoked haddock, cream, and eggs to create kedgeree.
Eggs scrambled with spices, potatoes, and onions (bhurji) are popular across the north, often eaten with bread or paratha. Fresh fruits and yogurt are also common, providing a light alternative to the heavier cooked options.
Kashmir and the East
In Kashmir, where the day starts particularly early, breakfast is usually a quick cup of tea with bread. Kashmiris drink a green tea called kahva, made in a samovar with sugar, cardamom, and ground almonds. The breads eaten in Kashmir are leavened wheat breads more closely related to Middle Eastern cuisines than Indian, including the slightly sweet bakirkhani and sesame-sprinkled tsachvaru.
In eastern India, especially West Bengal, breakfast might include luchi (deep-fried flatbreads) served with potato curry or cholar dal (sweet Bengal gram curry). Across the country, tea is the most common breakfast beverage, though in the south filter coffee reigns supreme. This rich tapestry of regional traditions offers a stark contrast to the single-dish focus of Grits and the simplicity of Israeli Breakfast, where a kibbutz-style buffet takes centre stage.
