David Bouley

David Bouley (May 27, 1953 – February 13, 2024) was an acclaimed American chef who pioneered the New American culinary style in New York City. He was the sole owner and chef of restaurants in TriBeCa, best known for his flagship restaurant, Bouley, which earned a four-star review from The New York Times and set a new standard for fine dining in America.
Early Life and Training
Like most culinary luminaries, David Bouley knew from an early age that he wanted to be a chef. Born in Storrs, Connecticut, to parents of French-Canadian descent, he was one of nine children. While his parents took their large family to dine at restaurants all over New York City, it was the food he tasted on his grandparents’ farm in Rhode Island that gave Bouley his earliest and fondest food memories. He still insisted that he finds complicated food “unmemorable.”
After graduating from Cornell University, Bouley went to France where he studied under renowned chefs Fredy Girardet, Paul Bocuse, and Joël Robuchon. With their tutelage, he learned that the simplest food is often the hardest to cook.
Career
Back in New York, Bouley held positions at La Côte Basque, Le Périgord, Le Cirque, and Montrachet before opening his namesake restaurant in TriBeCa in 1987. Bouley quickly became known as the most notable dining experience in New York, earning a four-star review from The New York Times and receiving James Beard Foundation awards for Best Restaurant and Best Chef.
In 1996, Bouley closed his original restaurant and embarked on ambitious new projects. He joined with restaurateur Warner LeRoy to take over as chef of The Russian Tea Room, and planned the “Bouley Complex”—envisioning a new version of the restaurant Bouley, a cafe, a professional cooking school, test kitchen, nutrition workshop, research center, wine cellar, retail store and mail-order company.
Later ventures included Bouley at Home, a dining room, food lab, cooking school and bake shop; Bouley Botanical, which focused on plant-based cuisine; and the establishment of the David Bouley Living Pantry Foundation to promote nutritional education.

Legacy
David Bouley died on February 13, 2024 at age 70. His death, from a heart attack, was confirmed by his wife, Nicole Bartelme. Tribeca Citizen noted that “his work here as a chef, business owner and resident made Tribeca a destination for fine dining starting four decades ago.” His career included eight restaurants and two retail concepts, and his influence on New York dining is indelible.
